Brussels Sprouts with Bacon and Mushrooms
serves 4
Ingredients
- 1 1/2 lb Brussels sprouts
- 2 T olive oil
- 4 oz thick cut bacon, cooked well and crumbled
- 12 oz Cremini mushrooms
- 1 ea shallot, chopped
- 4 cl garlic, thin slice
- 2 T sherry
- 1 t red pepper flakes
- 2 T lemon juice
Instructions
- Toss the sprouts in olive oil, season to taste, then broil or fry until done.
- Sauté the mushrooms in the bacon fat. Add the shallot and garlic and cook until the shallots are softened. Add the sherry and pepper flakes, then cook until the sherry is fully absorbed by the mushrooms.
- Toss in the sprouts and bacon, dress with lemon juice, season to taste.
- Plate and serve.
